Honey Wrapped Pears
4 pears, 4 cups of water
2 cups of raw sugar, 1 cup of honey
1/2 lemon, juiced, 3 cinnamon sticks
3 whole cloves, 1 vanilla pod, broken in half
2 sheets of puff pastry.
Preheat oven to 180, line a baking tray with baking paper. Peel your pears and set them aside. In a medium saucepan, combine water, sugar and honey; bring to a simmer over medium. Once the sugar has dissolved, add the pears, lemon juice, cinnamon sticks, cloves and vanilla pod. Simmer until the pears are fork tender, about 30 minutes. Once tender, remove from pan and allow to cool. Continue to simmer the poaching liquid until reduced to 1/2 cup. Cut pastry into thin stripes and wrap them around the pears, starting at the base working up. Pop them into the oven for around 20 minutes or until golden. I love using our enamel pie dishes for serving.
